Quinoa (pronounced "keen-wah") is a funny sounding food, but packs a lot of power. Quinoa is a small grain-like crop that is versatile, healthy and yummy. Although it is grain-like, it is a pseudocereal rather than a true cereal or grain and is closely related to species such as beets, spinach and tumbleweeds. Quinoa is actually the seed of a plant related to spinach and has a light and fluffy texture when it is cooked.
Not only is Quinoa a super food that is very high in protein, it is also the only plant-based protein that contains all nine essential amino acids needed to sustain good health. I have learned a great deal about this tiny food and have experimented with it in many recipes. I now use it as a replacement for rice, couscous and pasta.
