Green Jacket Salad Dressing got it's name from the old famed Green Jacket Restaurant in Augusta, GA. The restaurant was located near the famed golf course where the yearly Masters golf tournament takes place and was a must stop destination in Augusta. Unfortunately, the restaurant no longer exists, but many restaurants in Augusta still make versions of the famous dressing.
While visiting my boyfriend's parents in Augusta for Easter weekend, they told me about this famed dressing and how amazing it was. When dinner time arrived we decided to dine at a restaurant called Rae’s Coastal Café where they serve the similar Green Jacket Salad Dressing. It was delicious. It did not feel heavy and had a ton of flavor. I decided that I was a fan and began some research on the dressing. From information on numerous sites and a couple test runs, here is the recipe I came up with which tastes just like the famed dressing:
Original Dressing Ingredients:
Step 1
Chop the tomato and squeeze all the juice out and into a bowl. Once done squeezing, also add the the tomato pulp into the bowl.
Step 2
Add remaining ingredients into the bowl and mix well.
Step 3
Pour over 1/2 head of lettuce and top with warm pita croutons and parmesan cheese (the only cheese I had on hand at the time was feta so I used that and it was delicious).
Note: The recipe does not make that much dressing, so I doubled it and put the leftovers in a salad dressing container in the refrigerator. Also, the original recipe calls for the dressing to not be chilled but served fresh as is. I however like my dressing a little more chilled so I made it a little in advance and placed it in the refrigerator. It seems to be doing just fine in there.

- 2 tablespoons Regular Oil (I used Olive Oil as I was a little scared of regular oil)
- 1 tablespoons Red Wine Vinegar
- 1 Tomato, chopped
- 2 teaspoons seasoning salt
- 2 teaspoons accent (I left this out and it still had plenty of flavor)
- 1/2 teaspoon oregano
- 1/2 teaspoon parsley
